Through USDA data, I learned about dozens of unique microgreens with powerful benefits. But most weren't available commercially. So, I started growing them myself—carefully selecting and combining the most potent varieties into one optimal blend.

Fresh microgreens spoil quickly. For busy families like ours, that was a dealbreaker. I began experimenting to find a shelf-stable format that preserved their full nutritional value. After much trial and error, I developed a powdered version that worked for me - retaining all nutrients while being extremely easy to incorporate into my meals.

Friends and family loved it. Their demand - and their results - made me realize this solution could help many more people. That's when Lake Forest Farms was born.

Building our own production capabilities helped us realize our true strength was in processing, not large-scale farming.
