PB&M Sandwich: Our Family’s Go-To Peanut Butter (and microgreen) Sandwich

At our house, peanut butter sandwiches are a regular snack. Quick, easy, and something the kids can make themselves without much fuss - but of course, ours has microgreens hidden inside!

Instead of jelly, we use apple slices. We started doing this a while ago because we've tried to move away from refined sugar wherever we can. Apples not only add just the right amount of sweetness, but they also give the sandwich a great crunchy texture. But the kids have their own twist on it - they stir in one serving (just 1/8 teaspoon) of MiracleMicrogreens powder right into the peanut butter before they spread it.

One of their favorite things to do is make these sandwiches when friends come over. As they proudly serve, our kids love revealing the secret - that their friends have a sandwich packed with veggies in front of them. Their friends usually don't believe it, and it's super fun to watch the surprise. Keep in mind, sadly the VAST majority of their friends would push away almost any veggie we add to the plate, but they always love the sandwiches, without fail.

PB&M Sandwich Recipe

Ingredients:

  • 2 slices of bread (we like whole wheat or sourdough)
  • 2 tablespoons creamy peanut butter (something easy to stir)
  • 1/8 teaspoon MiracleMicrogreens powder per sandwich
  • 1 small apple, thinly sliced

Instructions:

  1. Mix the peanut butter and MiracleMicrogreens powder together in a bowl until well combined. Use 1/8 per sandwich.
  2. Assemble and enjoy!
